Once upon a time when I was farming, I raised lamb, which is when I acquired a taste for this most delicious of meats. It always makes me happy to see locally-produced lamb on the menu! At the Larkspur, Sungold Lamb from Alberta is served with green peas, picked mint, and heirloom carrots. (Confession: I was a tad disappointed the lamb is only offered as a small plate.) Then I spotted the salmon main (pesto-crusted and served with roasted cauliflower, chick peas, and tahini curry) and all was well in my world again.

Local, sustainable, and in season offerings are the result of the farm-to-table philosophy underlying menu choices at the Larkspur. The charcuterie board reflects that approach with its assorted Valbella Meats, pickled veggies, spreads, and rustic bread. The result is distinctly regional and very Canadian— with a cosmopolitan flair.

There’s just something about fire. The way it cooks our food, the way it warms us up, it is truly fascinating.  We have fire to thank for Park Distillery and all of their creations. They believe the campfire is the original restaurant and all of their tasty wood-fired and smoky delicious meals incorporate these beloved tastes. Sample and delight in their mesquite beef hoagie or their rotisserie chicken swich and know it was made with fiery love.

To add to all the smoky fun, Park distills their own alcohol. Talk about a fresh drink, you will never taste anything like their homemade vodka which originates from six glaciers high in the Rocky Mountains. Smoky tasty treats and fresh spirits? Park Distillery is unlike any other.
